Switch to Data Package v2 specifications

Example datasets currently use the Frictionless Data Package v1 specifications, as those are currently supported by the ecosystem tools (frictionless-py). Once the Data Package v2 specifications are supported by the tools, also the datasets in this repository need to be updated.
